Ingredients:

  • 1 liter whole milk
  • 1 cup granulated sugar
  • 1 cup semolina (fine)
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • Chopped pistachios or walnuts (optional, for garnish)

Instructions:

  1. In a large saucepan, heat the milk and sugar over medium heat until the sugar dissolves completely. Do not boil.
  2. In a separate pan, melt the butter over low heat. Add the semolina and stir continuously until it turns golden brown and fragrant (about 5-7 minutes).
  3. Slowly pour the warm milk mixture into the semolina while stirring constantly to avoid lumps.
  4. Continue cooking on low heat, stirring constantly, until the mixture thickens to a pudding-like consistency (about 10-15 minutes).
  5. Remove from heat and stir in the vanilla extract.
  6. Pour the mixture into serving bowls or a shallow dish. Let it cool and set.
  7. Garnish with chopped pistachios or walnuts if desired.
  8. Serve warm or at room temperature.
