Ingredients

  • 3 medium zucchinis
  • 2 eggs
  • 1/2 cup flour
  • 100g feta cheese, crumbled
  • 3 spring onions, finely chopped
  • Fresh dill and parsley, chopped
  • 1 tsp baking powder
  • Salt and black pepper
  • Vegetable oil for frying

Instructions

  1. Grate the zucchinis and squeeze out as much liquid as possible using a clean towel.
  2. In a bowl, mix the grated zucchini with eggs, flour, crumbled feta, spring onions, dill, parsley, and baking powder.
  3. Season with salt and pepper. The mixture should resemble a thick batter.
  4. Heat vegetable oil in a frying pan over medium heat.
  5. Drop spoonfuls of the batter into the hot oil and flatten slightly.
  6. Fry until golden brown on both sides (about 3 minutes per side).
